Although I have been a little out of sorts outside of my 6ft. kitchen, I was able to whip up a poke cake for the cast of the show Swing! in which I am currently working. This recipe uses no leftovers and doesn’t rely on special mixers or pans for good results. Simply mix a box of yellow cake mix with a can of pumpkin, a tsp of pumpkin pie spice and nothing else. Pour into a 9×13 inch greased baking dish and cook at 350 degrees for 25 minutes. Let cool 10 minutes before poking which I used the opposite end of a mixing spoon. The holes create a place for the liquid to seep into get it… “poke cake.” Pour with a can of sweetened condensed milk and cover with a container of cool whip. This one is great for Florida this time of year when in the 90 degree weather of Florida because it is stored in the fridge and eaten cold.
This is also a great solution to an overcooked cake!
