mango carrot salad
Every day I watch The Chew and was inspired by the simplicity of the sweet and salty salad to accompany a stir fry (which will be featured next). I doubled this recipe as I found it is extremely addicting. It balanced out an asian inspired meal well with some brown rice prepared the way America’s Test Kitchen suggests in the oven for the best results.
1 mango, julienned
1 carrot, julienned
2 scallions (I used mostly green parts)
2 limes juiced (I used jarred juice)
Simple slice, combine and serve cold or room temperature
